So I’m totally inspired from all of the delicious products I tried at Expo West. Like many days, this leads me to load the boys in the triple stroller bright and early for a trip to West Seattle PCC for ingredients for major cook-off in my little kitchen. I saw a mango salsa that I want to turn into a whole grain creation so here it goes:
Chopped a couple mangos, handful cilantro, few serranos, fresh lime, big splash rice vinegar, sprinkle of salt and then…. drumroll… two cups cooked quinoa. Drizzled some olive oil and tossed it all together. S-U-C-C-E-S-S. As I was eating big scoops of this on corn chips I thought of how delicious it would be dumped on top of a nice salmon or white fish filet, wrapped in parchment and then baked, or just as a side to some baked chicken or even served along some soft scrambled eggs in the morning (huevos graincheros combos never end). Seriously, this is so good is could be tossed with a big bowl of fresh spinach and be an instant lunch. Breakfast, lunch or dinner recipe-EUREKA!

and then we all headed to “Mission Monday“. For almost two years now we’ve loaded up the boys in the triple stroller and walked to Mission, where Dawndra and I both work, for burritos and awesome margaritas. The boys love the music, burritos and decor and most days this keeps them occupied. Most days. Did I mention best margaritas around?
